My Husband’s Favourite Cookies

Chocolate Macaroons

1/2 cup butter or margarine

1/2 cup of milk

2 cups of sugar

1/2 teaspoon salt

2 1/2 cups of oatmeal

1/2 cup coconut

1/2 cup cocoa

1 teaspoon vanilla

Substitutions :

If you don’t have coconut or if you don’t like it. Use 3 cups of oatmeal.

If you don’t have cocoa you can use 5 big spoons of quick or chocolate syrup for the kids drinks. If you don’t have vanilla leave it out.

1. in a large mixing bowl, mix oatmeal, coconut and cocoa, blend well.

2. in a large saucepan, combine butter, milk, sugar and salt. Place over medium heat and stir until it comes to a bowl. Keep boiling for one minute and keep stiring. Remove and add vanilla.

3. Pour this liquid over the dry ingredients and mix thoroughly. Drop from a teaspoon onto a cookie sheet and let stand for 15 minutes. No cooking required.
